We're so happy you're interested in getting to know us. Here is a quick peek into our mission.

• First, food. What better way to create community than around food? Fresh, exciting, & delicious.
• The second, a conviction for supporting local. This means local farmers, local retailers and local restaurants. With this comes lots of seasonal changes to the menu.
• The third thing is to let the ingredients shine. Start with a quality product, give it the love it deserves, and don’t mess it up.
• Finally, love. When you walk in, we want you to feel instant joy. Welcomed like the family we've built over the last 14 years. We have a beautiful family of neighbors, regulars, friends, travelers, relationships all built around the wonderful people who've helped us over the years.

First opened in 2008, Todd Schulte created Happy Gillis and merged into the close knit community that is Columbus Park. In December 2013 Josh and Abbey Eans purchased Happy Gillis Cafe & Hangout and moved into the Columbus Park neighborhood of Kansas City, MO with their three children. Living and working in the same community seemed like a true fit. The Eans built Happy Gillis, to the amazing home it is today giving us delicious food for 10 years, before moving their family overseas for an all new adventure. In December 2023, a friend of the Eans, Cory Stipp, purchased Happy Gillis, and is keeping the traditon alive.

Currently ran by the Eans long time employee of 9 years, Jeffery Gatton, we are still here and going strong. We are part of a great community and we get to create beautiful, simple and delicious food.
